Who doesn’t love TACO SALAD?! In fact, I don’t know anyone who doesn’t enjoy a little Mexican food now and then. My problem is that I could eat it everyday. There’s just something about the combinations of ingredients and it’s such a comfort food. Because I like to eat this kind of food often and I’m trying to eat better I decided to try a lighter version of my typical taco salad and you know what? It was just as good. Seriously!
Reduced Calorie Taco Salad Recipe
- 1 Head of Lettuce, cleaned and chopped
- 3 Roma Tomatoes, diced
- 4 Green Onions, chopped
- 1 Can Black Beans
- 1 lb. Turkey Burger, cooked
- 1 Cup Light Cheddar Cheese
- 2 Cups Baked Tortilla Chips, crushed
- 1/2-3/4 Cup Fat Free Thousand Island Dressing (I used the Kraft brand.)
- 1 Avocado, diced (optional)
- Small Can of Sliced Black Olives (optional)
- Combine all the ingredients except the dressing.
- Mix in the Fat Free Thousand Island.
