Chicken Cream Cheese Enchiladas Main

For the longest time I’ve been trying to find a recipe for a cream cheese enchilada dish I ate at a restaurant a few years ago and just couldn’t find one that tasted like those incredible enchiladas. So, I decided to try and duplicate it myself. After a few tries I think I’ve come close. Here’s my recipe.

  1. 12 10" flour tortillas
  2. 3 chicken breasts, cooked and shredded
  3. 1/2 cube margarine
  4. 1/2 cup onion, minced
  5. 2 8 oz. packages of cream cheese, softened
  6. 1 can cream of chicken soup
  7. 1 package of taco seasoning
  8. 1 small can diced green chilis
  9. 28 oz. can green enchilada sauce
  10. 3 cups colby jack cheese, shredded
  1. Preheat oven to 375 degrees.
  2. Spray a 9x13 baking dish with cooking spray.
  3. Heat a large fry pan on medium heat.
  4. Melt margarine in the pan. Once it's melted pour into a bowl.
  5. One by one lightly crisp both sides of each flour tortilla adding additional margarine as needed.
  6. Once the tortillas are done add remaining melted margarine to the pan and saute onion until soft.
  7. Add the chicken, cream cheese, cream of chicken, taco seasoning, green chilis and 1/2 cup of enchilada sauce. Mix well until warm.
  8. Place 3/4 cup green enchilada sauce in the bottom of the pan and spread evenly.
  9. Place 1/2 cup of mixture down the center of each tortilla and sprinkle with a little cheese.
  10. Roll and place the enchilada in the pan. Repeat with the other tortillas.
  11. Spread the remaining enchilada sauce over the top and sprinkle with remaining cheese.
  12. Cover with foil and bake for 35 minutes. Remove foil and continue baking for 10 more minutes or until golden brown.
