One of our favorite salads in our family is this Pasta Shrimp Salad. It’s perfect for a nice summer dinner.
- 1 lb. package of saladroni pasta
- 2 quarts water
- 1 tsp. salt
- 1 Tbl. sugar
- 1 tsp. vinegar
- 1 1/2 cups mayonnaise
- 2 cans of deveined shrimp, drained
- 1 small package of Velvetta cheese
- 5 boiled eggs
- 1 bunch green onions
- 1 bottle of pimento or one tomato
- Bring water and salt to a boil. Add pasta and boil for nine minutes. Drain and cool.
- Combine sugar, vinegar, and mayonnaise and set aside.
- Cut Velvetta cheese in 1/2" squares.
- Slice green onions.
- Combine pasta, cheese, shrimp, onions, and pimento or chopped tomato.
- Add the dressing and mix well.
- Fold in chopped boiled eggs.
- Chill.
- Add additional mayonnaise, if needed.
