Summer and salads are the perfect combination don’t you think? I love all types of green salads, but sometimes I like to try one that’s a little different than a typical green salad. I found two salad ideas that sounded amazing, so I combined them together and made it my own and it turned out really yummy.


- 1 1/2 Cups Dried Quinoa
- 1/2 tsp. Salt
- 1/2 Cup Extra Virgin Olive Oil
- 2 Tbl. Balsalmic Vinegar
- 1 tsp. Minced Garlic
- 1 tsp. Dried Basil
- 1/2 tsp. Thyme
- Salt and Pepper, to taste
- 4 Cups Fresh Spinich and Arugula Mix
- 1 15 oz. Can of Garbanzo Beans, drained
- 1/2 Cup Roasted Red Bell Pepper, chopped
- 1/2 Cup Kalamata Olives, cut in half
- 1/2 Cup Feta Cheese, crumbled
- Cook the quinoa in salted water as directed on the package. Let cool.
- For the dressing combine the oil, vinegar, garlic, basil, thyme, salt, and pepper. Set aside.
- In a large bowl combine the spinach arugula mix, beans, peppers, olives, and quinoa.
- Toss with the dressing.
- Sprinkle with the feta cheese and serve at room temperature.
