Our family loves salads and this Bacon, Tomato, and Avocado Pasta Salad is a favorite. It’s creamy, savory, and perfect for BBQ or picnic.

Ingredients
  1. Salad
  2. 8 oz rotini or bow tie pasta
  3. 1 cup cherry tomatoes, sliced in half
  4. 8-10 slices bacon, cooked crisp & crumbled
  5. 3 green onion, thinly sliced
  6. 2 tablespoons chopped cilantro
  7. 1 avocado, diced
  8. 1 teaspoon lime juice
  9. Dressing
  10. 1 ripe Avocado
  11. ½ fresh Lime, juiced
  12. ¼ cup chopped cilantro
  13. 1 teaspoon cumin
  14. 1 teaspoon garlic powder
  15. ½ Cup Buttermilk
  16. 1/2 Cup Sour Cream
  17. salt & pepper to taste
Instructions
  1. Salad
  2. Cook pasta according to package directions. Drain and run under cold water.
  3. Toss diced avocado with lime juice.
  4. Combine all ingredients in a large bowl gently toss with dressing. Refrigerate 1 hour before serving.
  5. Store refrigerated up to 2 days.
  6. Dressing
  7. Place all dressing ingredients in a blender and process until smooth.
