I love to eat all kinds of salads in the summer. Pulling and eating veggies and fruit out of the garden is something I look forward to every year. Anything heavy in this hot weather just doesn’t appeal to me. Here’s an oldie, but goodie, recipe from my grandmother. It’s a great standby recipe that I use for most family gatherings and is a huge hit.
- 1 (16-oz.) package elbow macaroni
- 1 3/4 cup real mayonaise
- 3 Tbl. mustard
- 1/2 cup sour cream
- 3 T red wine vinegar
- 3 T sugar
- 3/4 cup diced ham
- 3/4 cup diced cheddar cheese
- 1 red bell pepper, diced
- 1/2 cup chopped celery
- ⅔ cup frozen peas, thawed
- 2 carrots, grated
- 1 cucumber, peeled and diced
- 1/3 cup dill pickle relish
- 1 tomato, seeded and diced
- ½ tsp salt (or to taste)
- ground black pepper (to taste)
- Prepare macaroni al dente. Drain and rinse in cold water. Set aside.
- Combine mayo, mustard, sour cream, vinegar and sugar in a small mixing bowl.
- Combine macaroni with ham, cheese, and all veggies in a large bowl.
- Add mayo mixture and toss until pasta is evenly coated. Season with salt and pepper to taste.
- Cover with plastic wrap and refrigerate overnight.
- Stir again before serving.
