Easter is just around the corner and I am so looking forward to family time and good food. Do you have traditional Easter foods that you reserve just for Easter? There are a few recipes that we look forward to, but this year I want to add something else to the menu. Reduced Calorie Taco Salad

Who doesn’t love TACO SALAD?! In fact, I don’t know anyone who doesn’t enjoy a little Mexican food now and then. My problem is that I could eat it everyday. There’s just something about the combinations of ingredients and it’s such a comfort food. Because I like to eat this kind of food often and I’m trying to eat better I decided to try a lighter version of my typical taco salad and you know what? It was just as good. Seriously!
