This recipe is a family favorite!
- 1 1/2 lbs. hamburger
- 1 tsp. salt
- 20 saltine crackers, crushed
- 1/4 cup of milk
- 1/2 tsp. worchestershire sauce
- 2 Tbl. finely chopped onion
- 1 egg
- 1/2 cup packed brown sugar
- 2 Tbl. corn starch
- 1/6 cup cider vinegar
- 1 Tbl. soy sauce
- 1 small green or yellow pepper, thinly sliced
- 1 13 oz. can of pineapple tidbits
- 1 cup of pineapple juice
- Combine first seven ingredients and shape into about 20 balls.
- Cook on medium heat, turning occasionally until brown about 20 minutes.
- Drain grease before adding meatballs to sauce.
- Mix brown sugar and corn starch in a skillet.
- Stir in pineapple with syrup, pineapple juice, vinegar, and soy sauce.
- Heat to boiling - stirring constantly. Reduce heat. Add meatballs.
- Cover and simmer for about 10 minutes.
- Stir in pepper. Cover and simmer until the peppers are crisp tender - about 10 minutes.
- Serve over rice.
