One of my goals for this new year is to get out of the recipe rut I’m in and eat healthier. I’m tired of the same old, same old, so I’m going to try a lot of new things and adjust them, if necessary, to make them more nutritious. I’m a big fan of salmon and this recipe turned out great.


- 3 lbs. Fresh Salmon
- 2 TBL. Olive Oil
- 1/4 Cup Light Mayonnaise
- 1 tsp. English Mustard
- 2 TBL. Skim Milk
- 1 TBL. Light Italian Salad Dressing
- 2 TBL. Finely Chopped Onion
- 2 TBL. Dash Seasoning Salt
- 1/2 tsp. Salt
- 1/2 tsp. Pepper
- 1/4 Cup Italian Bread Crumbs
- Preheat oven to 400 degrees.
- Spread olive oil in the bottom of a 9"x13" pan.
- Combine mayonnaise, mustard, milk, salad dressing, onion, and Dash seasoning. Mix well.
- Rinse the salmon. Salt and pepper both sides and place skin side down in the pan.
- Spread the mayonnaise mixture on top evenly.
- Top with bread crumbs.
- Bake for 10-15 minutes until salmon is opaque and flaky.
- Change your oven to the broiler setting and broil for another 5-10 minutes until topping is light brown and crispy.
