Here’s an old cookie recipe that I just love. They always come out great. If you like coconut you will like these cookies.

Ingredients
  1. 1/2 Cup Unsalted Butter
  2. 1/2 Cup Brown Sugar
  3. 1/2 Cup Sugar
  4. 1 Egg, beaten
  5. 1 tsp. Vanilla
  6. 1 Cup plus 2 TBL. Flour
  7. 1/2 tsp. Baking Soda
  8. 1/4 tsp. Baking Powder
  9. 2 Cups Special K Cereal, slightly crushed
  10. 1 1/4 Cups Sweetened Flaked Coconut
  11. 1/2 Cups Pecans (optional)
  12. 1 Cup Chocolate Chips (optional)
Instructions
  1. Cream together butter, sugar, and brown sugar.
  2. Beat in egg and vanilla.
  3. Add flour, baking soda, and baking powder and mix well.
  4. Add Special K cereal and coconut and mix well.
  5. If desired add the nuts and chocolate chips.
  6. Shape into 1 inch balls.
  7. Bake at 350 degrees for 12-15 minutes.

There are so many things I could say but I will just start with the basics. Mother to 4. Grandmother to 11 (Yes, 11. All under the age of 9.) I am a former Army wife and we spent 15 years traveling around the world. It was such a thrill to have seen so many places and meeting lifetime friends. I spent many years working in the craft industry and love getting together with friends and creating. I have a lifelong love of thrift shops, antiques, and yard sales.

    Just made these cookies and they are incredible. The combination of Special K cereal and coconut is genius. I skipped the chocolate chips this time but Ill definitely try them in my next batch.
