Here’s an old cookie recipe that I just love. They always come out great. If you like coconut you will like these cookies.


- 1/2 Cup Unsalted Butter
- 1/2 Cup Brown Sugar
- 1/2 Cup Sugar
- 1 Egg, beaten
- 1 tsp. Vanilla
- 1 Cup plus 2 TBL. Flour
- 1/2 tsp. Baking Soda
- 1/4 tsp. Baking Powder
- 2 Cups Special K Cereal, slightly crushed
- 1 1/4 Cups Sweetened Flaked Coconut
- 1/2 Cups Pecans (optional)
- 1 Cup Chocolate Chips (optional)
- Cream together butter, sugar, and brown sugar.
- Beat in egg and vanilla.
- Add flour, baking soda, and baking powder and mix well.
- Add Special K cereal and coconut and mix well.
- If desired add the nuts and chocolate chips.
- Shape into 1 inch balls.
- Bake at 350 degrees for 12-15 minutes.
