I’m an Oklahoma Girl! I love that beautiful state and the people that are there. A big portion of my family still live there and I love going back to visit every now and then. Some of my favorite memories are of family gatherings and the food. Oh, the food. Fish fries, fried okra, eggs and bacon every morning. Ha! it’s not the healthiest way to eat so it’s probably good that I don’t live there any more, but oh is it good. My grandmother and mother used to make a delicious pot of chicken and dumplings. You knew it was a special occasion when this was made.
The noodles (dumplings) are homemade and in my opinion the best part of the dish. Here’s the recipe:


- 3 lbs. of Chicken Breast
- 32 oz. Chicken Broth
- 2 Cups Water
- 1 tsp. Salt
- 1 tsp. Pepper
- 1 tsp. Garlic Salt
- 3 Stalks of Celery, sliced
- 1 Small Onion, diced
- 3 Cups Flour
- 1 tsp. Salt
- 3/4 tsp. Baking Soda
- 1 Cup Milk
- 4 Tbl. Shortening
- 1 Cube Butter
- 1 Cup Milk
- Combine first eight ingredients in a large soup pot and bring to a boil on high. Reduce heat to medium low and simmer for 20 minutes or until chicken is cooked through.
- Remove chicken and let it cool. Shred or cube the chicken. Keep broth in the pot.
- While the chicken is cooking combine the flour, salt, and baking soda in a medium bowl.
- Cut in the shortening using your fingers until the pieces are about pea size.
- Add milk a little at a time until you form a dough the consistency of a pie crust.
- On a floured board roll the dough out until about 1/8 inch thick. Using a knife cut it into strips about 1/2 inch thick. Let them sit for about 30 minutes to dry a little.
- Bring the broth to a boil. Add the dumplings and separate them as you add them to keep them from attaching to each other. Let boil for about 5 minutes.
- Add the shredded chicken, butter, and milk.
- Simmer for 10 minutes.
- Serve.
