Please Vote For My Stuffed Mushrooms

I don’t consider myself an amazing cook, but I like trying new things and challenging myself to improve.  I’ve always wondered if I would have any chance in a cooking contest.  When I saw this competition announced I jumped at the chance.  The scary thing was that a mystery product was going to be sent to me and I would have to use it to create something delicious.  Ha!  When I got the product in the mail I thought and thought and did some research on Colman’s Mustard.  I had heard of them before, but had never tried the product.  I learned this English product goes way back to the 1800’s and is considered “The Queen’s Mustard”.  The taste is amazing but what I enjoyed more was how smooth it is.



So, now I needed a recipe.  I thought of everything that works with mustard.  Hot dogs, corn dogs, glazes and marinades.  Hmmm….I needed something unique and tasty.  I love mustard on bratwurst and bratwurst is a sausage so, something with sausage.  Then it popped in my mind why not a stuffed mushroom?  Funny thing is I used to hate mushrooms when I was younger.  Later, I had gone to a party and they were serving a version of stuffed mushrooms that I thought were amazing.  Kind of fell in love with mushrooms after that.

Colman's Mustard Coupon


Incredible Stuffed Mushrooms
24 button mushrooms, cleaned with stems removed.  Set mushrooms aside.  Finely chop the mushroom stems.
1/2 an onion, minced
1/2 pound of sausage
Brown the sausage with the minced onion over medium heat.  Drain.
2 cloves of garlic, minced.
1 1/2 tsp. of Colman’s mustard
1/4 tsp. salt
1/4 tsp. pepper
1/4 cup apple juice
Mix well.  Set aside.
Combine using a mixer:
8 oz. of cream cheese, softened
1 egg yolk (this is to help combine the incredients)
2 TBL. apple juice
Add the meat mixture to the cream cheese mixture.
1/2 cup of Parmesan cheese
Mix well.
Spoon mixture into mushroom caps and place on ungreased cookie sheet.
Bake at 350 degrees for 20 minutes.
