Do you have an overabundance of zucchini from your garden laying around and you’re getting tired of the same old zucchini recipes. I discovered a recipe that I just love and added a few tweaks of my own.

Here’s the yummy zucchini recipe!


- 3 Eggs
- 1 Cup Grated Parmesan Cheese
- 1/3 Cup Oil
- 1 Garlic Clove, Minced
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
- 3 Cups Zucchini, Sliced
- 1/2 Large Onion, Diced
- 1 Cup Baking Mix (Bisquick)
- Preheat oven to 350 degrees.
- Whisk together first six ingredients.
- Add the zucchini, baking mix, and onion.
- Pour into a greased 9" deep dish pie pan.
- Bake for 25-35 minutes or until lightly browned.
