Decadent Lemon Bundt Cake

Lemon Theme

I think lemon desserts of any kind are my favorite, even over chocolate. I’m not a big fan of sour lemon things, but give me a sweet lemon pie, cookie, or cheesecake and I will love you forever.  Here’s a recipe for a favorite:

Decadent Lemon Bundt Cake

  1. 1 3 oz. Package of Lemon Jello
  2. 1 Cup of Boiling Water
  3. 1 tsp. Lemon Juice
  4. 1 Package of White or Yellow Cake Mix
  5. 3/4 Cup Oil
  6. 4 Eggs
  7. 2 Lemons
  8. 2 Cups Powdered Sugar, sifted
  1. Combine first three ingredients. Mix well and set aside to cool.
  2. Mix together cake mix, oil, and cooled lemon jello mixture and beat at a low speed for one minute.
  3. Add eggs one at a time beating at medium speed for three minutes.
  4. Pour into a well greased and lightly floured bundt cake pan.
  5. Bake at 350 degrees for 50 minutes or until tests done.
  6. Let cool in pan for 10 minutes.
  7. Invert onto a plate or rack.
  8. Punch holes in cake top with a fork.
  9. Glaze: Combine juice and grated rind of two lemons and 2 cups of sifted powdered sugar.
  10. Pour glaze over cake and continue to cool.

There are so many things I could say but I will just start with the basics. Mother to 4. Grandmother to 11 (Yes, 11. All under the age of 9.) I am a former Army wife and we spent 15 years traveling around the world. It was such a thrill to have seen so many places and meeting lifetime friends. I spent many years working in the craft industry and love getting together with friends and creating. I have a lifelong love of thrift shops, antiques, and yard sales.
