Peach Upside Down Cake

Out of all the fruit harvested in the late summer peaches are my number one favorite.

Other than sliced peaches with sugar and milk here is another recipe we love.

  1. 3/4 cup butter or margarine, divided
  2. 1/2 cup packed brown sugar
  3. 2 cups sliced, peeled fresh peaches
  4. 3/4 cup sugar
  5. 1 egg
  6. 1 tsp. vanilla extract
  7. 1 1/4 cup flour
  8. 1 1/4 tsp. baking powder
  9. 1/4 tsp. salt
  1. Melt 1/4 cup butter and pour into an ungreased 9 inch baking pan. Sprinkle with brown sugar.
  2. Arrange peach slices in a single layer over sugar.
  3. In a mixing bowl, cream sugar, remaining butter, egg, and vanilla. Mix well.
  4. Combine flour, baking powder, and salt. Add to creamed mixture alternately with milk. Spoon over peaches.
  5. Bake at 350 degrees for 45-50 minutes or until toothpick comes out clean.
  6. Cool for 10 minutes.
  7. Invert onto serving plate and serve warm with vanilla ice cream or whip cream.
