Chopped Salad
Every once in a while we love to have a big green salad as our dinner. It’s a nice change every once in a while. Have you ever heard of a chopped salad? I prefer it more than a regular salad that has large pieces of lettuce and other veggies with the dressing on top. I really like going to restaurants and cafes where I can go through a line and tell them what I want in my salad and then will chop everything up together just the way I like it. Here’s how I make mine at home.
I will start by making a regular tossed salad with the things my family and I like in it. For this one I’ve added iceberg lettuce, broccoli, cucumber, garbanzo beans, and tomatoes.
Old Fashioned Pasta Salad
I love to eat all kinds of salads in the summer. Pulling and eating veggies and fruit out of the garden is something I look forward to every year. Anything heavy in this hot weather just doesn’t appeal to me. Here’s an oldie, but goodie, recipe from my grandmother. It’s a great standby recipe that I use for most family gatherings and is a huge hit.
