Ingredients
  1. 2 1/2 Cups Sugar
  2. 2/3 Cup Light Corn Syrup
  3. 1/2 Cup Water
  4. 1/4 tsp. Salt
  5. 2 Egg Whites
  6. 1/2 tsp. Vanilla
  7. 1/2 tsp. Peppermint Extract
  8. 1/4 Cup Crushed Peppermint Candy
Instructions
  1. In a two quart sauce pan combine sugar, corn syrup, water, and salt.
  2. Cook to hard ball stage (260 degrees) stirring only until the sugar is dissolved.
  3. Beat egg whites until stiff peaks form.
  4. When syrup reaches 260 degrees very gradually add it to the egg whites beating at high speed.
  5. Add vanilla and peppermint extract and continue beating until candy holds it's shape about 5 minutes.
  6. Quickly drop candy from tablespoon onto waxed paper.
  7. Sprinkle immediately with crushed peppermint candy.
  8. Let cool.
Notes
  1. Instead of adding peppermint extract and crushed candy you can add small morsels of chocolate and stir into the candy slightly for a swirled look. Pecans, walnuts, or pistachios can be added.
  2. Another option is chopped dry cherries or cranberries.
