Peppermint Divinity

Melt in your mouth Christmas candy.

Ingredients
- 2 1/2 Cups Sugar
- 2/3 Cup Light Corn Syrup
- 1/2 Cup Water
- 1/4 tsp. Salt
- 2 Egg Whites
- 1/2 tsp. Vanilla
- 1/2 tsp. Peppermint Extract
- 1/4 Cup Crushed Peppermint Candy
Instructions
- In a two quart sauce pan combine sugar, corn syrup, water, and salt.
- Cook to hard ball stage (260 degrees) stirring only until the sugar is dissolved.
- Beat egg whites until stiff peaks form.
- When syrup reaches 260 degrees very gradually add it to the egg whites beating at high speed.
- Add vanilla and peppermint extract and continue beating until candy holds it's shape about 5 minutes.
- Quickly drop candy from tablespoon onto waxed paper.
- Sprinkle immediately with crushed peppermint candy.
- Let cool.
Notes
- Instead of adding peppermint extract and crushed candy you can add small morsels of chocolate and stir into the candy slightly for a swirled look. Pecans, walnuts, or pistachios can be added.
- Another option is chopped dry cherries or cranberries.
