Christmas Quiche

This quiche is a delicious treat for anytime, but especially for Christmas

Ingredients

  • 5 eggs
  • 1 1/4 cups half & half
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. dry mustard
  • 1 Tbl. flour
  • 1/2 pound bacon Can add or substitute sausage and ham
  • 1 handful fresh spinach mushrooms can be added
  • 1 1/4 cups shredded Colby Jack cheese
  • 1/2 onion

Instructions

  1. Combine eggs, half & half, flour and seasonings. Set aside.

  2. Cut bacon into one inch pieces and fry. When about half way done add chopped onion and saute.

  3. Right before bacon and onions are done add fresh spinach and saute for one minute. Remove from heat and spoon onto paper towel lined plate.

  4. Prepare pie crust or use store bought. Pre-bake for 6 minutes at 350 degrees.

  5. Once pie crust has pre-baked add bacon mixture to the bottom. Top with cheese.

  6. Mix egg mixture one more time and pour into pie crust.

  7. Bake for 40 minutes or until knife inserted into the middle comes out clean.

  8. Cool for 15 minutes and serve.

Recipe Notes

To prepare ahead mix egg mixture, cover and refrigerate. Prepare pie crust, pre-bake as instructed, add bacon mixture and cheese and cover and refrigerate. When ready to bake stir egg mixture and pour into pie crust and bake as directed.

Quiche can be frozen for up to two weeks. Prepare as directed. Let cool. Cover well and freeze.
