I think quiche has gotten a bad wrap in the past. Many don’t even know what it is let alone have tasted it. Quiche is a delicious savory egg pie filled with good things like breakfast meats, cheese and vegetables and put into a pie crust. There are a variety of ways to make it depending on how simple or elaborate you want to make it. This recipe for Quiche is a family favorite and is the yummiest breakfast or brunch for Christmas morning. Quiche For Christmas Breakfast

 

The quiche recipe below is one I’ve been making for years and I love it! It’s a filling meal all on it’s own. The nice thing is that it’s versatile. If you want to make it low calorie substitutions can easily be made. Quiche reminds me of pizza. Many like a pizza plain and only want cheese or cheese and pepperoni. Some like quiche fully loaded with meats, veggies and a variety of cheeses (I fall under this category.). When you try this recipe make it how you like it. The basic ingredients are the same. The recipe below is how I usually make it.  For Christmas I will usually prepare everything the night before to be poured into my prepared crusts and baked. No need to prepare the day of when all you want to do is spend it with family.

Quiche Ingredients 

 

  • Prepared pie crust (For my easy, made from scratch, pie crust go here.)
  • 5 eggs
  • 1 1/4 cups of half & half
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbl. flour
  • 1 tsp. dry mustard
  • 1 1/4 cup shredded Colby Jack cheese
  • Half pound of bacon (You can substitute or add ham or sausage.)
  • Half an onion
  • Hand full of fresh spinach (Adding mushrooms is also good.)

 

Quiche Instructions

 

  • Pre-bake pie crust at 350 degrees for 6 minutes.
  • In a mixing bowl mix together eggs, half & half, flour, salt, pepper and mustard. Set aside.
  • Cut strips of bacon into one inch pieces. In a fry pan cook bacon until almost cooked.

  • Dice onion and add to bacon before it’s finished frying to soften the onions. When almost finished add spinach and saute for one minute.

  • When bacon, spinach and onion are finished cooking spoon out onto a paper towel lined plate.
  • In the bottom of the pre-baked pie crust add the bacon mixture and top with cheese.
  • Stir the egg mixture one more time and add over the bacon and cheese.

 

Egg mixture

 

  • Bake for 40 minutes or until eggs are cooked through. (Use a knife and poke the quiche in the middle. If it comes out clean the quiche is done.)
  • Let sit 10-15 minutes to set.

 

This recipe really is worth the preparation time. Your family will rave about it and keep asking for it. I’ve made this for other events like showers and brunches and get asked for the recipe often.

Christmas Quiche

This quiche is a delicious treat for anytime, but especially for Christmas

Course Breakfast

Prep Time 30 minutes
Cook Time 40 minutes
Total Time 1 hour 10 minutes
Servings 6

Ingredients

  • 5 eggs
  • 1 1/4 cups half & half
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 tsp. dry mustard
  • 1 Tbl. flour
  • 1/2 pound bacon Can add or substitute sausage and ham
  • 1 handful fresh spinach mushrooms can be added
  • 1 1/4 cups shredded Colby Jack cheese
  • 1/2 onion

Instructions

  1. Combine eggs, half & half, flour and seasonings. Set aside.

  2. Cut bacon into one inch pieces and fry. When about half way done add chopped onion and saute.

  3. Right before bacon and onions are done add fresh spinach and saute for one minute. Remove from heat and spoon onto paper towel lined plate.

  4. Prepare pie crust or use store bought. Pre-bake for 6 minutes at 350 degrees.

  5. Once pie crust has pre-baked add bacon mixture to the bottom. Top with cheese.

  6. Mix egg mixture one more time and pour into pie crust.

  7. Bake for 40 minutes or until knife inserted into the middle comes out clean.

  8. Cool for 15 minutes and serve.

Recipe Notes

To prepare ahead mix egg mixture, cover and refrigerate. Prepare pie crust, pre-bake as instructed, add bacon mixture and cheese and cover and refrigerate. When ready to bake stir egg mixture and pour into pie crust and bake as directed.

Quiche can be frozen for up to two weeks. Prepare as directed. Let cool. Cover well and freeze.

There are so many things I could say but I will just start with the basics. Mother to 4. Grandmother to 11 (Yes, 11. All under the age of 9.)
