Chunky Corn and Black Bean Salsa

Ingredients

  • 2 large Tomatoes chopped
  • 1 14 oz. can Mexican Style Corn
  • 1 12 oz. can Black Beans
  • 1 bunch Green Onions sliced thin
  • 1/2 cup Cilantro chopped
  • 2 Avocados diced
  • 1/2 cup Ketchup
  • 2 Tbl. Vinegar
  • 1/2 tsp. Cumin or to taste
  • 1/2 tsp. Garlic Powder or to taste
  • 1 tsp. Chili Powder or to taste
  • Salt and Pepper to taste

Instructions

  1. Drain corn and black beans.  Combine beans, tomatoes, onion, corn, cilantro, and avocado.  

  2. Combine ketchup, vinegar, and spices in a separate bowl and mix well. Pour over the vegetables and combine.

  3. Chill and serve with chips.
