Christmas Almonds

I can’t believe it’s already December 5th.  I hope you’re enjoying each day of this Christmas season.

Here’s a favorite recipe of mine.  I got it from my Mom and I make it nearly every year at this time.  If you love almonds these will be addicting. These are perfect for gifts, as well.  I hope you enjoy.

Christmas Almonds

A scrumptious and sugary treat perfect for Christmas. Would make awesome gifts, as well.

Ingredients
  1. 1 1/4 Cups Packed Brown Sugar
  2. 1 Tbl. Butter or Margarine
  3. 1/4 Cup Cream
  4. 1/2 tsp. Cinnamon
  5. 1/8 tsp. Salt
  6. 1 tsp. Vanilla
  7. 2 Cups Almonds, unsalted
Instructions
  1. Combine sugar, cream, butter, cinnamon, and salt in a two quart saucepan. Mix well.
  2. Bring to boil over medium heat.
  3. Place candy thermometer in mixture.
  4. Continue cooking to 244 degrees (firm ball stage), stirring constantly.
  5. Remove from heat and add vanilla and nuts.
  6. Continue stirring until candy grains on nuts.
  7. Spread on cookie sheet to cool. Break up large chunks.

There are so many things I could say but I will just start with the basics. Mother to 4. Grandmother to 11 (Yes, 11. All under the age of 9.) I am a former Army wife and we spent 15 years traveling around the world. It was such a thrill to have seen so many places and meeting lifetime friends.
