We eat a lot of soups in the winter time. Do you? I think they are the perfect combination with the cold weather. Here’s a favorite of ours that’s easy to make.
- 6 Medium Sized Potatoes
- Water
- 1/2 Medium Sized Onion, Diced
- 3 Tbl. Butter or Margarine
- 1 Cup Cream
- 1 tsp. Garlic Powder
- Salt and Pepper
- 1 Cup Cheddar Cheese, Grated
- Peel, clean, and cut the potatoes into bite sized pieces.
- In a large pot cover the potatoes with water. Bring to a boil, reduce heat and simmer until potatoes are tender.
- In a small fry pan melt butter. Add diced onion and cook until they are translucent. Set aside.
- When potatoes are done pour half the water out of the pot. Using a potato masher mash the potatoes in the water until they are broken into smaller pieces.
- Add cream, onion and butter combination, garlic powder, and salt and pepper to taste.
- Simmer for 30 minutes. Stirring occasionally.
- Add grated cheese and mix well. Once it's melted through stir again and serve.
