Cheddar Potato Soup

We eat a lot of soups in the winter time. Do you? I think they are the perfect combination with the cold weather. Here’s a favorite of ours that’s easy to make.

Cheddar Potato Soup

Ingredients
  1. 6 Medium Sized Potatoes
  2. Water
  3. 1/2 Medium Sized Onion, Diced
  4. 3 Tbl. Butter or Margarine
  5. 1 Cup Cream
  6. 1 tsp. Garlic Powder
  7. Salt and Pepper
  8. 1 Cup Cheddar Cheese, Grated
Instructions
  1. Peel, clean, and cut the potatoes into bite sized pieces.
  2. In a large pot cover the potatoes with water. Bring to a boil, reduce heat and simmer until potatoes are tender.
  3. In a small fry pan melt butter. Add diced onion and cook until they are translucent. Set aside.
  4. When potatoes are done pour half the water out of the pot. Using a potato masher mash the potatoes in the water until they are broken into smaller pieces.
  5. Add cream, onion and butter combination, garlic powder, and salt and pepper to taste.
  6. Simmer for 30 minutes. Stirring occasionally.
  7. Add grated cheese and mix well. Once it's melted through stir again and serve.
