I love a good cornbread, especially a sweeter version. It goes well with soup or salad and always takes me back to my youth when my mom would make it.
This cornbread recipe is quick, easy, and makes quite a bit which works great for my large family.
Preheat oven to 350 degrees.
1 package of yellow cake mix
2 packages of Jiffy corn bread mix
Combine the mixes together and add all the ingredients listed on the back of each box. Mix well and pour into a 9×13 cake pan that has been sprayed or oiled. Bake for 30-35 minutes or until it is golden brown and is pulling away from the edges.
You could always half the recipe by using one box of Jiffy cornbread and half the box of yellow cake mix. Remember to only add half the eggs, oil, and water.
Sometimes I like to bake it in an iron skillet, as well.
We top ours with butter and honey.
