Summer and salads are the perfect combination don’t you think? I love all types of green salads, but sometimes I like to try one that’s a little different than a typical green salad. I found two salad ideas that sounded amazing, so I combined them together and made it my own and it turned out really yummy.

Ingredients
  1. 1 1/2 Cups Dried Quinoa
  2. 1/2 tsp. Salt
  3. 1/2 Cup Extra Virgin Olive Oil
  4. 2 Tbl. Balsalmic Vinegar
  5. 1 tsp. Minced Garlic
  6. 1 tsp. Dried Basil
  7. 1/2 tsp. Thyme
  8. Salt and Pepper, to taste
  9. 4 Cups Fresh Spinich and Arugula Mix
  10. 1 15 oz. Can of Garbanzo Beans, drained
  11. 1/2 Cup Roasted Red Bell Pepper, chopped
  12. 1/2 Cup Kalamata Olives, cut in half
  13. 1/2 Cup Feta Cheese, crumbled
Instructions
  1. Cook the quinoa in salted water as directed on the package. Let cool.
  2. For the dressing combine the oil, vinegar, garlic, basil, thyme, salt, and pepper. Set aside.
  3. In a large bowl combine the spinach arugula mix, beans, peppers, olives, and quinoa.
  4. Toss with the dressing.
  5. Sprinkle with the feta cheese and serve at room temperature.
  6. Enjoy!

There are so many things I could say but I will just start with the basics. Mother to 4. Grandmother to 11 (Yes, 11. All under the age of 9.)
