When life gives you lemons make lemon cheesecake! This dessert is so heavenly and perfect for a summer get together. Not only is it fresh and light it’s so easy to make, too.
- 3 Cups Graham Cracker Crumbs
- 1/2 Cup Sugar
- 2/3 Cup Melted Butter
- 1 Small Package Lemon Jello
- 1 Cup Boiling Water
- 1 Can Evaporated Milk, chilled
- 1 Large Package Cream Cheese, softened
- 1 Cup Sugar
- 1 tsp. Vanilla
- Combine cracker crumbs and 1/2 cup sugar. Add in melted butter and mix well.
- Spread onto the bottom of a 9x13 cake pan. Light press.
- Place in a 350 degree oven for 10 minutes. Cool.
- Combine lemon jello and boiling water and mix well. Cool.
- Whip chilled evaporated milk until peeks form.
- Add jello mixture, sugar, vanilla, and cream cheese to whipped milk.
- Spread over crust and chilled.
- Optional: Serve with whip cream.
