Got Zucchini?

Do you have an overabundance of zucchini from your garden laying around and you’re getting tired of the same old zucchini recipes.  I discovered a recipe that I just love and added a few tweaks of my own.

I was tempted to sneak home with a few of her treasures.

Zucchini and Onion Pie
A heavenly and hearty dish that can be used as a main dish or a side dish.

Ingredients
  1. 3 Eggs
  2. 1 Cup Grated Parmesan Cheese
  3. 1/3 Cup Oil
  4. 1 Garlic Clove, Minced
  5. 1/2 tsp. Salt
  6. 1/4 tsp. Pepper
  7. 3 Cups Zucchini, Sliced
  8. 1/2 Large Onion, Diced
  9. 1 Cup Baking Mix (Bisquick)
Instructions
  1. Preheat oven to 350 degrees.
  2. Whisk together first six ingredients.
  3. Add the zucchini, baking mix, and onion.
  4. Pour into a greased 9" deep dish pie pan.
  5. Bake for 25-35 minutes or until lightly browned.
