Dreamy Apple Cranberry Salad

Last week I made this salad for a party using items I already had on hand and it turned out pretty good. I got a lot of great compliments on it, so wanted to share it with all of you. It took 15 minutes to make and was so refreshing and light. The leftovers were even better.

Dreamy Apple Cranberry Salad

A light and refreshing salad that is quick and easy to make.

Ingredients
  1. 2 Cups Diced Granny Smith Apples (with skin on)
  2. 2 Cups Diced Red Apples (with skin on)
  3. 3/4 Cup Dried Cranberries
  4. 1/4 Cup Coconut
  5. 1/4 Cup Chopped Pecans
  6. 1 Cup Vanilla Greek Yogurt
  7. 2 Tbl. Apple Juice
  8. 1/2 Tsp. Cinnamon
  9. 1/2 Tsp. Nutmeg
Instructions
  1. Combine apples, cranberries, coconut, and pecans together in a medium sized bowl.
  2. Whisk together the yogurt, apple juice, cinnamon, and nutmeg.
  3. Pour yogurt mixture over apple mixture and combine well.
  4. Chill until serving time.
Notes
  1. I used an apple slicer to cut and core and then just sliced the apple pieces.

There are so many things I could say but I will just start with the basics. Mother to 4. Grandmother to 11 (Yes, 11. All under the age of 9.)
